Ganache sobre cupcakes


Ganache é uma mistura cremosa de chocolate e creme de leite, utilizado como cobertura ou recheio de bolos, cupcakes e outros itens de confeitaria[1].


Ganache normalmente é feito aquecendo-se o creme, sendo adicionado em seguida o chocolate meio-amargo picado. A mistura é mexida até que o chocolate derreta e ganhe textura suave, podendo ser adicionados também licores ou essências. Dependendo do tipo de chocolate utilizado, o propósito que o ganache está sendo feito e a temperatura que será servido, a proporção entre chocolate e creme é alterada, para que a consistência ideal seja alcançada.


A receita original para recheio de bolos ou base de trufas é de duas partes de chocolate para uma parte de creme de leite, enquanto que para cobertura e recheio, a proporção é de um para um. O Ganache, quando resfriado, pode ser batido para ganhar volume e servir melhor como cobertura de bolos. Entretanto, se muito gelado, pode endurecer demais e ficar inutilizável para este fim.
